E-readers for PDFs
I need a new e-reader primarily for viewing heavy technical PDFs and textbook formats. My old 6-inch Kindle is simply too small for this, and constantly zooming or panning around the page is getting incredibly frustrating. Do any of you use a larger screen for academic reading? What size would you actually recommend to read comfortably?

I had the exact same issue with textbook PDFs. Standard screens just don't cut it. I switched to a 10.3-inch device, and it completely changed things since you don't have to squint or crop pages. If you are looking for options, you can check out some options here https://einktab.ca/product-category/large-size-ereaders/ to get an idea of what's available in the 10 to 13-inch range. For PDFs, I wouldn't go any smaller than 10 inches if you want to read comfortably without constant zooming.
